Tat soi wilts easily so store in a sealed plastic bag with a little moisture inside. Soak in cold water for 10 minutes if wilted.

Eat within one week of harvest.

When searching for recipes for tatsoi, look for recipes that call for spinach or baby bok choy which can be substituted with tatsoi.
